Welcome Aboard!

Hello family and friends ~
I have finally started our family's blogspot, so now you can see a little bit of what's going on in our lives. I will try to update it once every week or two, but you know how time flies!
The summer has gone swiftly by - we're already bringing in the "harvest". So far we've canned raspberry jam, pickles, pickled green beans and applesauce. I just started freezing corn and have a long long way to go. Next will be salsa! We have so many green tomatoes that I made fried green tomatoes for the first time. They were delicious although only two of my children liked them. Here is the recipe if you'd like to try making them yourself...
Zesty Fried Green Tomatoes
4 med. green tomatoes, cut into 1/4-inch slices
Salt
2 eggs
1/2 cup cornmeal
1/2 cup grated Parmesan cheese
3 tablespoons all-purpose flour
1/2 teaspoon garlic salt
1/2 teaspoon ground ginger
1/2 teaspoon dried oregano
1/8 teaspoon crushed red pepper flakes (optional)
1/4 to 1/2 cup olive oil
Sprinkle both sides of tomatoes with salt; let stand for 10 minutes. In a shallow bowl beat the eggs. In another shallow bowl combine the cornmeal, Parmesan cheese, flour and seasonings. Pat tomatoes dry. Dip in eggs, then coat with cornmeal mixture.
In large skillet, heat 1/4 cup oil over medium heat. Fry tomatoes, a few at a time, for 3-4 minutes on each side or until golden brown, adding more oil as needed. Drain tomatoes on paper towels. Serve warm. Yield: 6 servings.
Right now it is very peaceful here as all of the kids are outside making a movie. Viktor and Mike bought a video camera and they've all been working on a re-make of Lord of the Rings! Paulina asked if she could fall in the swamp for one of the scenes - they're very serious about this! I'll let you know how it turns out.
